Going North
Very little snow in Cable/Hayward . . . not sure what it will be like in Minocqua . . . probably headed to the UP (Upper Peninsula of Michigan for you non-midwesterners out there).
Last night I went for a bike ride since it was nearly 50 degrees. Instead of going straight home from work I just kept on biking. Does that mean that I've started my base miles for the year? That has got to stop. I'm supposed to be do base kilometers.
I did make some yummy food for the weekend though -- vegan sweet potato corn chowder and some excellent banana bread.
And today I offer you a cooking suggestion: To make the chowder do the following -
Roast two sweet potatos in the oven at 425 until they are fully cooked but not mushy (put a little olive oil on them to assist in the roasting process)
Saute a red onion, some leeks and celery (or whatever veggies you have like that)
Mix a tablespoon of tomato paste with a 1/4 cup veggie broth and then whisk into the sauted mixture along with some herbs that you have on hand and a pinch of salt if you like
Once that is blended add 1 3/4 cup broth along with a cup and a half or so of corn that has been pureed with a cup of water
Bring that to a boil and then add one diced potato
Simmer all that for about 25 minutes or until the potato is cooked
Then add a cup of corn (not pureed but whole kernels)
Wait a couple of minutes and add in the roasted sweet potatos and simmer until corn is cooked and everything looks tasty
If it is too thick you can add some soy milk at this point but it probably won't be necessary
Eat and enjoy!!
