Happy Holidays
Well, the holidays are over which is always a bit of a relief. Thanks to Dave and I both being sick though we were able to miss out on a lot of the usual holiday insanity. I did have to go visit my family on Christmas Day but it was a short visit and Dave stayed home since he was sick. And I spent most of my visit playing with my nephew's sons who seem to love me even though I see them very rarely. They are hilarious in their excitement to see me and they start yelling "Aunt Renee, Aunt Renee" the moment I arrive. I guess it's because I'm an adult who doesn't act that grown up.
The best part of the holiday is that since Dave and I were home for Christmas Eve I actually got to make a holiday dinner of our own. That means that we get to have yummy leftovers all week. Normally we are at a family dinner and neither of our families have any idea of what to make a vegetarian so no yummy leftovers. We're usually just happy that there is something we can eat at our family holiday diners. This year though I made some of my holiday favorites -- sourdough pumpkin strata, dressing with spinach and artichokes and mashed potatoes with squash. For dessert I made a dairy-free cheesecake that was excellent. Now that is what a holiday meal should be.
For Christmas Dave's Mom got us a Le Creuset oval oven. It's a beautiful piece of cookware. However, it's huge (family sized, really, as Dave's Mom really wants us to have a family). In addition, it's perfect for a brisket or a pot roast (Dave's Mom probably wishes we ate those items as well). I have to figure out some vegetarian item that is just crying out to be made in a very large oval dutch oven. Any vegetarian or vegan suggestions from the chefs who read my blog? It would be a shame to have such a nice piece of cookware and not use it regularly.
I think Dave and I are almost well enough to start up with exercise again. I rode to work today which went pretty well. One more day maybe and then it will be time to resume training. The first ski race is only 11 days away!

I don't know how midwesterners feel about baked beans, but a piece of cookware like that is begging for some baked beans.
Ridiculously large vats of veggie chili are also a possibility.
I bet you could cook a mean UnTurkey in that thing too!
