What a day!

Most of today has been spent cooking up some yummy food for tomorrow's cross clinic. The menu includes:
Mediterranean Couscous which has yummy kalamata olives, tomato and fresh basil
Southwestern Rice Salad with black beans, tomato, cucumber, cilantro, and corn
Roasted Sweet Potato Salad with sweet potatoes, red onion, red bell pepper and a tasty lime and cilantro dressing made with plain soyghurt
Banana bread (Dave came home from the WEMS race with lots of bananas that got over ripe this week)
Bread, hummus, veggies and such for sandwiches

Now the plan all along had been to spend a chunk of the day cooking food. However, we had some unexpected fun when the drain pipe in our basement backed up when I put in a load of laundry. Dave tried to unblock it with our little roter-rooter but we had to call in a professional. After quite a bit of work he was able to get it all back to working. It seems that tree roots were the problem. That's pretty much exactly how I wanted to spend a chunk of cash right before our vacation. Oh well, at least it didn't happen while we were gone as our tenants might not have noticed and if they had they probably wouldn't have known what to do.

Now we're just finishing up a little housecleaning so that Ben thinks that I'm organized and clean. Well, actually I doubt I would have time to get our house that clean and organized but at least it isn't too out of control. It actually will be kind of nice to come back from vacation to a somewhat organized apartment.

Now I guess I should stop blogging and start working on lining up some sponsors for CVC's cross race!
