Funny Times
As a PS to the last post . . . .
So I got home from the race last night and I felt the need to do something else . . . something not bike related. So I turned to cooking and decided to make Roasted Winter Squash and Apple Soup. I hadn't made it before but it was unbelievably good.
Ingredients:
1 good sized winter squash such as kaboka squash, peeled and cut into about 2 inch cubes
2 apples such as granny smith or gala, peeled, cored and cut into quarters
2 onions, peeled and quartered
3 cloves of garlic, peeled
2 tablespoons of olive oil
chili powder
a little salt
3-4 cups of vegetable broth or stock
Directions:
Preheat oven to 400. In roasting pan put the squash, apples, onions and garlic and mix with the olive oil. Put an ample amount of chili powder on top and a touch of salt. Roast at 400 for 45 minutes stirring every 10 minutes (or so as I really only did that a couple of times).
When done transfer half the vegetables to a food processor or blender and blend until smooth with 2 cups or so of vegetable stock. Then do the same with the remaining vegetables and enough of the stock to make it the consistency you desire.
Heat through over low heat and add in some more chili powder if desired. You could garnish with some pesto or something similar. And then eat. Delicious!!
Unfortunately while I was busy cooking up some delicious fall soup I was supposed to be doing something bike related. I had a meeting for the Dane County Bicycle Association. Had to send out a big apology email this morning as it wasn't until 10:30pm that I remembered that I had a 7pm meeting.
